Chocolate Chip Blondies

Ingredients:

  • 1 ¼ C. Gluten-free Baking Flour
  • ½ tsp. Baking Powder
  • 1/8 tsp. Soda
  • ½ tsp. Salt
  • 1/3 C. Soy-free Vegan Butter Spread
  • 1 C. Brown Sugar
  • 1 Tbsp. Ground Flaxseed Meal
  • ¼ C. Water, divided
  • 1 tsp. Vanilla
  • 8 oz. Free2b Chocolate Chips

Directions:

  1. Preheat the oven to 350 degrees and prepare a 9 x 9-inch square baking pan with parchment paper.
  2. Combine the flaxseed meal and 3 Tbsp. water in a small bowl. Whisk and set aside for 15 minutes.
  3. In a mixing bowl, combine and whisk the flour, baking powder, soda and salt.
  4. In a separate bowl, use a hand mixer to beat the butter spread and brown sugar.
  5. Add the “flax egg” to the butter and sugar mixture and incorporate.
  6. Gradually add the dry ingredients to the wet ingredients and incorporate until chickpea-sized clumps form. If the dough seems dry, add the remaining 1 Tbsp. of water to help bring it together.
  7. Fold the chocolate chips into the dough.
  8. Lightly press the dough into the prepared pan and bake for 20-25 minutes, until the top is golden.
  9. Lift the blondies out of the pan by the parchment paper. Cut into squares and serve warm.
