Chocolate Chip Blondies
Ingredients:
- 1 ¼ C. Gluten-free Baking Flour
- ½ tsp. Baking Powder
- 1/8 tsp. Soda
- ½ tsp. Salt
- 1/3 C. Soy-free Vegan Butter Spread
- 1 C. Brown Sugar
- 1 Tbsp. Ground Flaxseed Meal
- ¼ C. Water, divided
- 1 tsp. Vanilla
- 8 oz. Free2b Chocolate Chips
Directions:
- Preheat the oven to 350 degrees and prepare a 9 x 9-inch square baking pan with parchment paper.
- Combine the flaxseed meal and 3 Tbsp. water in a small bowl. Whisk and set aside for 15 minutes.
- In a mixing bowl, combine and whisk the flour, baking powder, soda and salt.
- In a separate bowl, use a hand mixer to beat the butter spread and brown sugar.
- Add the “flax egg” to the butter and sugar mixture and incorporate.
- Gradually add the dry ingredients to the wet ingredients and incorporate until chickpea-sized clumps form. If the dough seems dry, add the remaining 1 Tbsp. of water to help bring it together.
- Fold the chocolate chips into the dough.
- Lightly press the dough into the prepared pan and bake for 20-25 minutes, until the top is golden.
- Lift the blondies out of the pan by the parchment paper. Cut into squares and serve warm.
