This showstopper dessert layers rich brownie, cool minty ice cream, and our melt-in-your-mouth Mint Chocolate Cups into one epic, allergy friendly treat. It’s a labor of love—and 100% worth the wait.
Ingredients:
- 1 allergy friendly brownie mix
- 2 pints allergy friendly mint ice cream
- 16 Free2b Mint Chocolate Cups
- 2 Tbsp allergy friendly chocolate syrup (optional but delish)
- ¼ cup allergy friendly chocolate chips
- 1 tsp coconut oil
Let’s Make It:
- Get started: Line two 8x8” pans with parchment paper.
- Mix & divide: Make your brownie batter following the box directions. Divide it evenly between your two pans and smooth the tops.
- Bake: Bake according to the box instructions—but start by halving the time since they’ll be thinner. Keep an eye on them until the centers are just set.
- Cool & freeze: Let brownies cool on a rack until room temp, then pop them in the freezer for 2–3 hours.
- Prep your pan: Line a 5”x11” ice cream cake pan or large loaf pan with parchment for easy layering later.
- Soften the scoops: Set your ice cream out for 10–15 minutes so it’s easy to spread.
- Slice & snack: Cut 8 Mint Chocolate Cups into quarters. Then trim two brownie strips to fit your loaf pan perfectly—these will be your “noodles.” (Snack on the extra brownie scraps… we won’t tell.)
- Layer one: Lay one brownie strip in the bottom of your pan. Spread 1 pint of mint ice cream over it. Press 8 whole Mint Chocolate Cups into the ice cream. Drizzle with syrup if you’re using it.
- Layer two: Add your second brownie strip, then spread the second pint of ice cream over the top. Smooth it out like frosting.
- Freeze: Into the freezer it goes for at least 4 hours.
- Top it off: Once frozen solid, it’s time to dress it up!
- Melt magic: Melt the chocolate chips and coconut oil together until smooth.
- Final flourish: Drizzle ⅔ of the melted chocolate over your lasagna. Sprinkle the chopped Mint Chocolate Cups on top, then drizzle the rest of the chocolate over everything.
- Freeze again: Let it freeze another 3–4 hours until completely set.
- Slice & serve: Cut into dreamy slices and enjoy every minty-chocolatey bite. Store any leftovers in the freezer (if there are any).
