Sun Cups Volcano Pancakes

Ingredients:
Chocolate Sun Cups (1 per pancake)
1 cup Bob’s Red Mill Organic Brown Rice Flour
1 tbsp Agave or sweetener or your choice
1 tbsp baking powder
pinch of salt
pinch of cinnamon
1 tbsp chia seeds/3 tbsp warm water or 1 egg
3/4 cup dairy-free beverage or water
cooking oil for frying

Directions:
Make your egg substitute first. Add 1 tbsp of chia seeds to 3 tbsp warm water in a small bowl. Let it sit for about ten minutes, stirring occasionally. Or use an egg if that works for you. Add all of the pancake ingredients to a bowl and mix. Stir in the chia seed mixture to the pancake mixture, or the egg instead. In a large pan on medium heat, add a bit of cooking oil. Pour 1/2 cup of the pancake batter on the hot skillet. Let it cook for 30 seconds, then add a Sun Cup to the center. Cook for 2 minutes, or until the middle of the pancake bubbles. Using a metal, non-grated spatula, flip the pancake and cook the other side. Remove from the pan and top with your favorite toppings!
