Our Free2b Brookies are the perfect blend of cookie and brownie, stuffed with delicious Free2b Dark Chocolate Sea Salt Caramel Mini Cups. These allergy friendly treats are ideal for after-school snacks, these brookies offer a sweet, indulgent break after a long day of learning. Packed with rich chocolate flavors and a surprise caramel center, they're sure to be a hit with kids and adults alike, providing a little moment of joy in every bite!
Ingredients:
For the Cookie Layer:
1 ½ C. gluten-free flour blend
½ C. granulated sugar
½ C. brown sugar
½ C. dairy-free butter, softened
1 tsp vanilla extract
1 flax egg (1 tbsp flaxseed meal + 3 tbsp water)
½ tsp gluten-free baking soda
¼ tsp salt
1 C. Free2b Baking & Melting Wafers
For the Brownie Layer:
1 C. gluten-free flour blend
½ C. cocoa powder
1 C. granulated sugar
½ tsp gluten-free baking powder
½ tsp salt
1 flax egg (1 tbsp flaxseed meal + 3 tbsp water)
½ C. dairy-free butter, melted
¼ C. oil of choice
1 tsp vanilla extract
½ C. Free2b Dark Chocolate Sea Salt Caramel Mini Cups, chopped
Instructions:
1. Prepare the flax eggs: Mix 1 tbsp flaxseed meal with 3 tbsp water for each flax egg needed. Let it sit for 5 minutes to thicken.2. Preheat and prepare: Preheat your oven to 350 degrees F. Line a 9x9-inch baking dish with parchment paper or lightly grease it, alternatively you can create individually brookies in a cupcake pan.
3. Make the Cookie Layer:
- In a large bowl, cream together the dairy-free butter, granulated sugar, and brown sugar until light and fluffy.
- Add the vanilla extract and flax egg, and mix until well combined.
- In a separate bowl, whisk together the gluten-free flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the Free2b Baking & Melting Wafers.
- Press the cookie dough evenly into the prepared baking dish.
4. Make the Brownie Layer:
- In another large bowl, mix together the melted dairy-free butter, oil, and granulated sugar until well combined.
- Add the flax egg and vanilla extract, and mix until smooth.
- In a separate bowl, whisk together the gluten-free flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped Free2b Dark Chocolate Sea Salt Caramel Mini Cups.
5. Assemble the Brookies:
- Spread the brownie batter evenly over the cookie dough layer in the baking dish.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out mostly clean (a few crumbs are okay, but it shouldn’t be wet).
6. Cool and enjoy:
