Have some family fun making these perfectly gooey no-cook s’mores!
The water from 1 can of white or garbanzo beans
1/2 Cup of coconut cream from a can
1/2 Cup of sugar
1 tsp Vanilla extract
2 tsp Xanthan gum
With a handmixer, beat the bean juice until stiff peaks form, about 10-15 minutes. Slowly add the sugar and continue to mix. Add the xanthan gum and coconut cream and blend for an additional 2 minutes. Mix in the vanilla extract and enjoy!
