Chopped Veggie Dip

Ingredients:

  • 1 Pkg. free2b Bagel Chips

Dip

  • ½ Purple Cabbage
  • 1 Head of Broccoli
  • 3 Carrots
  • 2 C. Baby Kale
  • ¼ C. Sunflower Seeds
  • ¼ C. Pepitas
  • 2 Tbsp. Chia Seeds

Dressing

  • 3 Tbsp. Olive Oil
  • 2 Tbsp. Red Wine Vinegar
  • 1 tsp. Dijon Mustard
  • Salt and Pepper, to taste

Directions:

  1. Working in batches, combine the vegetables in a food processor and pulse until consistently chopped.
  2. Combine the seeds in a small bowl and set aside.
  3. Separately, whisk the dressing ingredients together until emulsified.
  4. Combine the veggies and the seed mixture. Toss with the dressing and serve with bagel chips.
